Simple Recipes – Daniel Fast
“The Daniel [fast] involves your mind, your spirit, your soul and your body” – focusing on these aspects of our lives is certain to bring about positive changes. When this is done, the rest of our lives is reshaped for the better. As Rick Warren stated in The Purpose Driven Life, what we tell ourselves helps to determine the outcome of our circumstances. Romans 12:2 (CEV) reads, Don't be like the people of this world, but let God change the way [we] think. Then [we] will know how to do everything that is good and pleasing to him. Remember the Daniel Fast is a guideline vs. a concrete regimen about what we eat or drink. Should we slip up and consume something outside our meal plan, we shouldn’t give up. Pray for forgiveness. Then forgive ourselves and continue the course.
Here are 2 bean soup recipes & 1 recipe for vegetable soup that can be prepared in the slow cooker.
Vegan Black Bean Soup
1 tablespoon olive oil
1 large onion, chopped (boost bone density, helps control blood sugar & more)
2 carrots, chopped
1 stalk celery, chopped (good for heartburn, indigestion, inflammation and more)
4 cloves garlic, chopped (lowers Cholesterol, improves memory, helps fight colds & flu & more)
2 tablespoons chili powder (helps to keep eyes healthy, great for hair & skin, helps support digestive system & more)
1 tablespoon ground cumin (helps control blood sugar, fights bacteria and parasites, aids in weight loss)
1 pinch black pepper (may promote gut health, may lower cholesterol levels, boosts absorption of other nutrients)
4 cups vegetable broth
4 (15 ounce) cans black beans, undrained, divided (high in protein, prevents fatty liver, controls appetite & more)
1 (15 ounce) can whole kernel corn (high in fiber, prevents Anemia, lowers blood pressure & more)
1 (14.5 ounce) can crushed tomatoes (fights certain cancers, improves vision, helps with diabetes management & more)
Heat olive oil in a large pot over medium-high heat. Sauté onion, carrots, celery, and garlic in hot oil for 5 minutes. Season with chili powder, cumin, and black pepper; cook for 1 minute. Stir in vegetable broth, 2 cans beans, and corn. Bring to a boil.
In a food processor or blender, add the remaining 2 cans beans and tomatoes until smooth. Stir into boiling soup, reduce heat to medium, and simmer for 15 minutes. Makes 6 servings.
Quick Black Bean Soup [amended]– serves 4
2 (15 ounce) cans black beans, partially drained
1 (15 ounce) can diced tomatoes with green chile peppers, drained
2 (15 ounce) cans vegetable broth, divided
1 ½ teaspoons ground cumin
1 teaspoon salt
1 teaspoon ground black pepper
¼ teaspoon cayenne pepper
1 (15 ounce) can black beans, partially drained
3 cups hot cooked rice
Place 2 cans black beans, diced tomatoes with green chile peppers, 1 cup vegetable broth, cumin, salt, black pepper, and cayenne pepper into a blender and blend until smooth; pour into a saucepan and add remaining vegetable broth and the last can black beans. Place saucepan over medium heat, bring mixture to a simmer, and cook for 15 minutes.
Serve over pre-cooked brown or wild rice (1/2 cup rice in ea. bowl)
Slow Cooker Vegetable Soup Recipe [amended]
1 Medium Onion (diced)
2 cups mixed vegetables (fresh or frozen, or 2, 15-ounce cans mixed vegetables, drained)
2 cups lima beans (fresh or frozen, or 1, 15-ounce, can Lima beans, drained)
2 cups corn (fresh or frozen, off the cob or 1, 15-ounce, can niblet corn, drained)
2 cups carrots (sliced or 1, 15-ounce, can carrots, drained)
4 pounds whole tomatoes (peeled and diced, or 4, 15-ounce, cans diced tomatoes)
1 (15-ounce) can tomatoes and okra
2 cups water
1 teaspoon salt
½ teaspoon ground pepper
Place all the ingredients in the slow cooker, stir and allow to cook until tender - approximately 4 hours.
Should you need to take medication in-between the meals, you can add peanut butter to rice cake.
Eating raisins is another in-between food that can also be consumed.
